Fruit tarts!

Difficulty:**

Have you seen those amazing strawberry tarts looking so glossy and appetising?
You can make them at home! Is not as hard as you think.

You will need:
  • tart shells
  • vanilla pastry cream
  • fruit
  • apricot glaze

The tart shells can be purchased in super market, if you don't have experience making pastry dough and rolling it, honestly don't bother, pastry shells are perfectly fine to use.

Buy seasonal fruit or the fruit of your choice. I recommend you go for:

  • strawberries
  • blackberries
  • raspberries
  • blueberries
  • mango
  • kiwi
  • peaches
For the Pastry Cream, go to the link or browse in this blow for: How to make Pastry Cream.

Apricot Glaze
Is going to help the fruit to stay fresh and glossy for a longer period of time. To make the glaze, place one small jar of apricot jam, add half of the weight of water, and bring to a boil. Once it has boiled, pass it through a fine sieve. While hot, brush it on top of the fruit.

Making the Tarts:

  • Line up the tarts, removing them from the packaging.
  • place the pastry cream in a piping bag
  • pipe 3/4 of the tart shells
  • cut the fruit and decorate the tarts
  • glaze the tarts with apricot glaze
  • finish decorating them with coconut, ground nuts or simply icing sugar

I like adding some raspberry puree or raspberry jam inside the raspberry, is an unexpected detail that makes it more tasty.

You can arrange them over a glass or use colourful plates.
