150 g Oatmeal
130 g Demerara or light brown sugar
130 g Butter (room temperature)
80 g Flour
1 Egg (room temperature)
75 g Candied Cranberries
1/4 tsp baking powder
1/4 tsp baking soda
pinch of salt
1 tbsp Vanilla Extract

Start by creaming the butter and sugar until the sugar has completely dissolved.
Add the egg and vanilla extract mix it until the mix is light and fluffy.
Add the oats and sift the flour, baking soda, baking powder and salt, mix it until all is uniform, add the cranberries and mix.
There is two methods to store and bake cookies one is to scoop the dough over the tray, chill and bake.
The other is to make a roll with plastic wrap, this method is easy to store, freeze and when need it just slice the desire amount of cookies and wrap again.
Preheat the oven at 160°C, bake for 12 to 15 minutes.
