The Interview @ The Kitchen with Peggy Chan


Peggy Chan is currently living in Hong Kong, was my classmate at Le Cordon Bleu, she was my fine dining, traveling and gastronomic adventurous mate, I can say she is an honourable person and a great friend, as a Chef  Peggy is a very Zen, has impeccable palate and elegant taste for cooking. I have nothing but respect and love for this dear friend. Enjoy reading our interview from very far distance...

1. What has been your biggest challenge as a Chef?


 I stopped being a chef for a while and learnt how to manage restaurants instead. I've decided to come back with the Chef skills i've learnt because I realized that one can never run away from their passions. I'd say the toughest challenge throughout this entire journey is to learn not to criticize myself so often and to take things less seriously.


2. What hat has been the best complement you have received?


That I am destined and made for F&B.


3. What is the best advice that you can give in the kitchen?


 Love what you do. Every bit of it. If you don't love it, it's not for you.

4. Whats your favourite single ingredient?



 Mushrooms.

5. What is your perseption about Vanilla?



What nature provides us with is magical. Vanilla is magic.

6. What's your guilty pleasure in food?



Artisanal cheese. Even if it's got rennet in it.





7. If you got to choose your last meal what would it be?


A coconut. Natural sugars from coconut water to keep me hydrated, coconut meat to fill me up just enough. Don't want to feel bloated before I get cremated!

8. What is your next project?



I will be opening an organic vegetarian cafe, cooking school and sustainable food workshop, hoping to share with my community ways to live and eat healthy.


9. What has been the most memorable meal you can remember?


An afternoon picnic of cheese, french bread and brilliant wine, simply laid out next to lake Kawaguchi, overlooking Mount Fuji on a beautiful autumn day.

10. What has been the most expensive meal you have ever had?


Degustation at Restaurant L'arpege in Paris
