The Interview @ the Kitchen with Paola Sibilla

Paola Sibilla is a fantastic Italian Chef, in 3 words I'd describe her as passionate, confident and cooks with her heart. Her cooking training started from a young age, all her family have been in the Restaurant business for many generations and is worth to say that her mom is a Pasta Master. 

She open her Italian Restaurant in Brixton Village in November 2010 "Casa Sibilla". After a year and half after opening, Paola and her partner Lydie have turn the restaurant in to a busy and cosy place, to enjoy food, wine and a good talk. Casa Sibilla is a place where you can have the table for the entire night enjoying a nice bottle of Italian wine and every bite on your plate; candle lights and soft Italian music. I recommend to get a side of roasted vegetables, they are amazing!  





1. What has been your biggest challenge as a Chef?

When I was in Italy I had to do a TV Show, it wasn't that hard really.

So tell me something that you have find challenging or hard.

Am very secure of myself so I know everything would be fine.

2. What has been the best complement you have been received?

My food was better than an orgasm.
Well that is a great complement!

3. What is the best advice you have received in the Kitchen?

Less dirty you make, less you have to clean.

4. What is your favourite single ingredient?

Lamb, and of course my family Olive Oil

5. What is your guilty pleasure in food?

Oxtail and rice épicé (jamaican food)

6. What did you wanted to be when you were a kid? (Besides becoming a Chef)

7. What has been the most memorable meal you can remember?

Raw Seafood at Apsleys in the Lanesborough Hotel

8. What has been the most expensive meal you have ever had?

The Square (It was bad, bad service not great food, I regret paying that)

9. What has been the most funny request you have ever had?

Risotto with Meatballs
(LOL)

10. If you got to choose your last meal what would it be?

Pan fried lamb with rosemary potatoes
