Passion Fruit Tart

Passion Fruit, is the fruit of a climber plant, it grows on top and around trees and the roots absorb the nutrients of the tutor tree;  it can become like a plague if is not control. The flowers are so beautiful, it has all sort of purple, yellow and white tones. The flavour is unique, it tick all the right boxes for a tropical and exotic flavours, Is acidic, clean, refreshing... goes well with red berries, citrus fruits and all the tropical fruits. So here is the recipe  for a yummy tart, very easy to make.

Tart:
To make this job easier buy pre baked tart cases. If not you can make the tart base, I would recommend you to use the recipe from my new book "The Vanilla Project" (soon to be published).

Passion Fruit filling:
10 passion fruits
1 orange
1 lemon
125 g sugar
150 ml Double Cream
3 eggs
2 yolk

Cut in half the passion fruits, and place all the seeds in a bowl, add the juice of the orange and the zest and juice from the lemon. Add the sugar and whisk it until almost dissolved, add the eggs and yolk and whisk again, add the cream. Pass the mix through a sieve.

Bake at 130° C for about 45 minutes, or until the centre is firm and it doesn't look liquid. Cool down carefully and cut. Decorate with white chocolate shavings and a couple of raspberries, also you can sprinkle some Icing Sugar.
